Quinoa Part Of Healthy New Year In Nyack

Known as the “Mother Grain” quinoa (keen-wah) was a staple of the Incan Indians and is still an important food source to the indigenous people along the Andes in South America. I discovered the nutritious and delicious grain in the past year. I now use quinoa as a rice or potato replacement. Quinoa has much higher protein content than any other grain and contains all eight essential amino acids. It is also gluten free! I also love the look as the seed germ kernel forms a ring around the grain like a miniature Saturn.
I like to spice it up a bit, often substituting chicken stock for water when cooking and at various times adding sautéed vegetables, hot sauce, grilled chicken, and even as a base in soup. I think only your culinary imagination is the limit and I hope to increase my quinoa use in 2014. I think if you try this hearty grain, you will agree about this tasty healthy starch alternative.
